Also commonly referred to as “Bacalhau”, “Bacalao” or “Baccala” is the most famous of the white fish. This fish is harvested in the icy waters of the North Pacific where it is frozen on board immediately, ensuring the highest quality. It is then put through our production facility to match each customer’s specifications on size and dryness.
