Atlantic Pollock Fillets
Atlantic Pollock Fillets (Pollachius Virens) may also be referred to as Saithe, Goberge or Colin. Not to be confused with its gadus family member, Alaskan Pollock (Gadus Chalcogrammus), which is a smaller, cheaper fish that is lighter in color. Atlantic Pollock is easily separated by its darker color and its distinct taste that makes it one of the most popular fish throughout the caribbean communities. This fish is caught in the icy waters of the North Atlantic and hand cut and boned locally.
