Atlantic Pollock
Atlantic Pollock (Pollachius Virens, sometimes referred to as saithe, is harvested from the cold waters of the North Atlantic. Like the codfish, it is a excellent source of protein. The meat is slightly darker in color than the other members of the cod family with firm flesh that makes it excellent for salting and drying. Saithe is a staple of the caribbean diet.
